Festive Recipe ~ Whole Roasted Turkey with Foie Gras and Truffles Chestnut Stuffing

We have made sure that the recipes that we are sharing in this edition are full-proof and bring a lot of magic to your dining table. Don’t forget to prepare a sit-down meal with baubles and hand written messages adding warmth and charm for your guests. Here’s the Whole Roasted Turkey that is going to be the ultimate showstopper!

Whole Roasted Turkey with Foie Gras and Truffles Chestnut Stuffing

Serves: 8-10


For the Roasted Turkey

  • 6-8 kg whole turkey
  • 1 tsp curing salt
  • 400 gm Maldon salt*

For the Foie Gras, Black Truffle And Chestnut Filling

  • 500 gms brioche bread which is crumbed
  • 3 tsp truffle oil
  • foie gras cooked
  • 50 gm truffle salsa
  • salt
  • pepper
  • 500 gm butter, unsalted
  • 200 gm onion, chopped
  • 20 gm thyme leaves, chopped

To finish

  • 1 bunch thyme
  • 10 pods of garlic
  • 2 lemon
  • 3 onions, peeled
  • 4 sprigs of sage
  • Maldon salt*

* Maldon Salt is a popular brand of salt that is endorsed by many popular chefs around the world. It is created through natural processes and is available in many Dubai supermarkets like Choitram’s. You can source special ingredients like fois gras online from places like Secrets Fine Food.


For the Roasted Turkey

  1. Mix curing salt and Maldon salt with l liter water in a pot and bring to boil.
  2. Let it cool completely and then immerse the rinsed turkey and refrigerate overnight.

For the Foie Gras, Black Truffle And Chestnut Filling

  1. Whisk in the foie gras, truffle and butter together.
  2. Sauté the onion and thyme and mix into the whisked mix.
  3. Add all the other ingredients and combine well.

To finish

  1. Remove the turkey from the brine and rinse well. Wear gloves and release the skin from the flesh of the turkey ensuring you don’t tear the skin .Take the foie gras, truffle and butter mix and spread evenly under the skin. Season the cavity with Maldon salt. Stuff the cavity with lemon halves, garlic heads cut by half, half onion, thyme sprigs, sage.
  2. Keep in the chiller for one hour. Remove and sprinkle salt on the skin as well and keep in a nonstick roasting pan. In case you are using cast iron or stainless steel roasting pan please line the pan with thick cut carrots, celery and onions and they place the turkey on top.
  3. Please ensure the turkey legs are trussed so that the shape is retained.
  4. Roast the turkey in a pre-heated oven at 180 degree centigrade for 30-40 minutes or until skin is golden brown .Reduce the temperature to 145 degree for additional 90-110 minutes.

Chef Avinash hearts out:

If the skin is getting over colored place an aluminum foil on top of the turkey. Remove from the oven and let it rest for 45 minutes before carving and serving your guests. The turkey is traditionally served with roasted root vegetable, roasted or mash potato, buttered Brussels sprouts, cranberry sauce and gravy.
